2 kgs kumara
2 -3 T olive oil
salt and pepper
Handful mint leaves, chopped roughly
Large handful coriander, chopped roughly
Dressing:
4 cloves of garlic, minced
Juice and zest of 4 limes
2 T brown sugar
2 T soy sauce
2 T fish sauce
2 T peanut oil
2 tsp sesame oil
1 red chilli finely chopped
