Stir-fried Pak Choi with Garlic and Ginger

Ingredients

1 tbs coconut oil or peanut oil
1 bunch pak choi (washed, quartered)
1 tbs ginger (minced)
1 garlic clove (thinly sliced)
1 tsp honey
1 tbs soy sauce
splash of toasted sesame oil

Directions

Heat oil over medium heat. Add ginger and pak choi and stir-fry for 2 minutes. Add garlic, honey and soy sauce. Cook for 2-3 minutes until just tender. Toss through sesame oil.

This veg bag scheme is one of the few good new things to have happened this year. It has been wonderful to have such a wide variety of delicious veg, always fresh and bursting with flavour.
